Fjellbrød

Fjellbrød is a dense and nutritious Norwegian whole wheat bread filled with seeds and oats.

Ingredients

  • 2 cups Milk
  • 1 tbsp Dry active yeast
  • 2 tbsp Sugar
  • 2 cups Whole wheat flour
  • 1 tsp Salt
  • 1 cup Oats
  • ½ cup Pumpkin seeds
  • ½ cup Sesame seeds
  • ½ cup Flax seeds
  • ½ cup Poppy seeds

Instructions

  • In a large bowl, mix together flour and all of the seeds, oats, and salt
  • Warm up milk until warm to touch. Then add dry active yeast and sugar. Let sit until the yeast starts to activate. (Starts to bubble)
  • Make sure that your flour/seed mixture is mixed well. Then add in the milk/yeast liquid into the dry ingredients
  • Mix together and knead the dough on a flour surface for 5 minutes
  • Cover with a damp towel and let rise for an hour in a warm spot
  • Line a loaf pan with wax paper. Take the dough out of the mixing bowl and start to form into the shape of the loaf pan and place inside the loaf pan
  • Use a knife to score the top of the bread
  • Top with which ever seeds and oats you prefer. I used oats, pumpkin seeds, and poppy seeds
  • Preheat oven to 450° and bake for 30-45 minutes until golden brown
  • Slice and enjoy this dense, nutrious Norwegian bread
