Fjellbrød
Fjellbrød is a dense and nutritious Norwegian whole wheat bread filled with seeds and oats.
Ingredients
- 2 cups Milk
- 1 tbsp Dry active yeast
- 2 tbsp Sugar
- 2 cups Whole wheat flour
- 1 tsp Salt
- 1 cup Oats
- ½ cup Pumpkin seeds
- ½ cup Sesame seeds
- ½ cup Flax seeds
- ½ cup Poppy seeds
Instructions
- In a large bowl, mix together flour and all of the seeds, oats, and salt
- Warm up milk until warm to touch. Then add dry active yeast and sugar. Let sit until the yeast starts to activate. (Starts to bubble)
- Make sure that your flour/seed mixture is mixed well. Then add in the milk/yeast liquid into the dry ingredients
- Mix together and knead the dough on a flour surface for 5 minutes
- Cover with a damp towel and let rise for an hour in a warm spot
- Line a loaf pan with wax paper. Take the dough out of the mixing bowl and start to form into the shape of the loaf pan and place inside the loaf pan
- Use a knife to score the top of the bread
- Top with which ever seeds and oats you prefer. I used oats, pumpkin seeds, and poppy seeds
- Preheat oven to 450° and bake for 30-45 minutes until golden brown
- Slice and enjoy this dense, nutrious Norwegian bread
