Katsudon
Let's talk Japanese comfort food. I grew up eating katsudon, a popular Japanese donburi dish. Katsudon is deep fried pork cutlet cooked in a sweet & savory sauce cooked with onions and egg over rice.
Tonkatsu
- 1 Pork cutlet
- 1/4 cup Flour
- 1 Egg
- 1/4 cup Panko bread crumbs
Katsudon
- 2 Eggs
- 1 tbsp Soy sauce
- 1 tbsp Dashi broth
- ¼ cup Water
- 1 tsp Sugar
- ¼ Onion
Toppings (Optional)
- Sliced green onions
- Pickled ginger
- Shichimi togarashi
Tonkatsu

Season pork cutlet with salt and pepper.

Bread pork by first dipping in flour, egg, then panko bread crumbs.

Shallow fry these in oil of your choice for ~7 minutes until crispy and golden brown.

Let cool down for a bit and slice into small pieces.
Katsudon

In a small frying pan, add water, dashi, soy sauce, sugar and sliced onions.

Cook on high heat until onions are translucent. Add sliced tonkatsu.

Beat 2 eggs and pour around and on top of tonkatsu. Cover and let cook for ~30 seconds to 1 minute.

Put rice in a serving bowl and slide Katsudon on top of rice.
Toppings (Optional)

Top with sliced green onions, pickled ginger and shichimi togarashi.
