Bun Thit Nuong (Vietnamese Grilled Pork & Rice Noodles)

  • 1 package Rice noodles

Pork Marinade

  • ½ cup Brown sugar
  • 2 Lemongrass
  • ½ Onion
  • 4 cloves Garlic
  • ½ tbsp Black pepper
  • 1 tbsp Fish sauce
  • 2 tbsp Soy sauce
  • 3 tbsp Oil
  • 1 lb Pork

Additional Protein: (optional)

  • Grilled shrimp

Garnish

  • Lettuce
  • Mint
  • Cilantro
  • Cucumbers
  • Do chua
  • Crushed peanuts
  • Green onions

Dipping Sauce

  • Nuoc mam

Pork Marinade

  1. Mince garlic, onions, lemon grass into a bowl. Mix in pepper, sugar, fish sauce, soy sauce. Add in pork and let marinade in fridge for 8 hours, overnight for best results.

  2. Grill Pork and cut into pieces. Grill shrimp with salt and pepper.

  3. Prepare noodles according to packaging.

  4. Assemble the bowl by placing a lettuce base, then vermicelli noodles. Add slices of pork, shrimp, do chua, and fresh herbs. Garnish with cilantro, green onions and crushed peanuts.

  5. Serve with Nuoc Mam.
