Mince garlic, onions, lemon grass into a bowl. Mix in pepper, sugar, fish sauce, soy sauce. Add in pork and let marinade in fridge for 8 hours, overnight for best results.
Grill Pork and cut into pieces. Grill shrimp with salt and pepper.
Prepare noodles according to packaging.
Assemble the bowl by placing a lettuce base, then vermicelli noodles. Add slices of pork, shrimp, do chua, and fresh herbs. Garnish with cilantro, green onions and crushed peanuts.
Serve with Nuoc Mam.
