Katsudon

Let's talk Japanese comfort food. I grew up eating katsudon, a popular Japanese donburi dish. Katsudon is deep fried pork cutlet cooked in a sweet & savory sauce cooked with onions and egg over rice.

Ingredients

Tonkatsu

  • 1 Pork cutlet
  • 1/4 cup Flour
  • 1 Egg
  • 1/4 cup Panko bread crumbs

Katsudon

  • 2 Eggs
  • 1 tbsp Soy sauce
  • 1 tbsp Dashi broth
  • ¼ cup Water
  • 1 tsp Sugar
  • ¼ Onion

Toppings (Optional)

  • Sliced green onions
  • Pickled ginger
  • Shichimi togarashi

Instructions

Tonkatsu

  • Season pork cutlet with salt and pepper.
  • Bread pork by first dipping in flour, egg, then panko bread crumbs.
  • Shallow fry these in oil of your choice for ~7 minutes until crispy and golden brown.
  • Let cool down for a bit and slice into small pieces.

Katsudon

  • In a small frying pan, add water, dashi, soy sauce, sugar and sliced onions.
  • Cook on high heat until onions are translucent. Add sliced tonkatsu.
  • Beat 2 eggs and pour around and on top of tonkatsu. Cover and let cook for ~30 seconds to 1 minute.
  • Put rice in a serving bowl and slide Katsudon on top of rice.

Toppings (Optional)

  • Top with sliced green onions, pickled ginger and shichimi togarashi.
